Cheesy Asparagus Casserol

2 bunches fresh asparagus, trimmed
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon garlic powder
Salt and pepper to taste
1 cup buttery crackers, crushed (such as Ritz)
Directions:

Preheat your oven to 375°F (190°C). Grease a baking dish.
Steam the asparagus until tender-crisp, about 2-4 minutes. Drain and arrange them in the prepared baking dish.
In a mixing bowl, combine the cheddar cheese, Parmesan cheese, mayonnaise, sour cream, garlic powder, salt, and pepper.
Spread the cheese mixture over the asparagus, covering them evenly.
In another bowl, mix the crushed buttery crackers with melted butter and sprinkle this mixture over the cheese layer.
Bake in the preheated oven for about 25-30 minutes or until the casserole is bubbling and the top is golden brown.
Allow it to cool slightly before serving.
Prep Time: 15 minutes | Baking Time: 25-30 minutes | Total Time: 40-45 minutes

Air Fryer Steak Fries

Ingredients

  

  • 2 russet potatoes washed
  • 1 tbsp olive oil
  • 1 tbsp Pappy seasoning optional
  • 2 tbsp granulated garlic
  • 1/4 cup shredded parmesan cheese you can use grated too
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Cut potatoes into wedges & place in a large bowl.
  • Drizzle olive oil over potatoes & add seasonings.
  • Toss to combine & coat.
  • Transfer to air fryer basket & insert into the machine.
  • Set the air fryer to 400 degrees & cook for 20 minutes (stirring half way through)
  • Serve with ranch dressing or ketchup

Meatball Boats

1 pound ground beef
1 large egg
1/3 c breadcrumbs
1/4 c Parmesan cheese
1 Tbsp minced garlic
1 Tbsp fresh chopped parsley
Salt and pepper to taste
1 Tbsp olive oil
2 c marinara sauce (made my own sauce)
8 mini hoagie buns ( made my own buns)
8 slices Asiago cheese (i used mozzarella )
Preheat oven to 350 deg
Spray baking pan
Add ground beef, egg, breadcrumbs, garlic and parsley in a bowl and mix well with hands and add salt and pepper to taste.
Shape into meatballs and det aside. Add oil to a skillet on med heat. Cook meatballs for 5 minutes , until seared on all sides. Place meatballs on parchment lined baking sheet, bake for 12 minutes. Remove from oven and set aside. Cut oval top on buns and scoop out center, leaving 1/2" around the outsides. Place buns on a baking pan. Lay 1 slice of cheese in the hollow, bake for 8 minutes. Add 2 tbsp of sauce on top of cheese, place 3 meatballs on the sauce, add more sauce on meatballs, top with parmesan cheese. Bake for 6-8 minutes.

Dorito Taco Salad

  • 1 pound ground beef (or turkey)
  • 1 packet taco seasoning mix
  • 1 head of lettuce, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup diced red onion
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 cup ranch dressing
  • 1 bag Doritos (nacho cheese flavor), crushed

Instructions:

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the taco seasoning mix to the cooked ground beef, following the instructions on the packet. Usually, you’ll need to add water and simmer until the mixture thickens.
  3. In a large salad bowl, combine the shredded lettuce, cherry tomatoes, shredded cheddar cheese, diced red onion, black beans, and corn.
  4. Add the seasoned ground beef to the salad bowl and toss everything together until well combined.
  5. Pour the ranch dressing over the salad and toss again to coat the ingredients evenly.
  6. Just before serving, add the crushed Doritos on top of the salad to add crunch and flavor. You can crush the Doritos directly into the salad or serve them on the side.

CHILI CHEESE BURRITO

 

INGREDIENTS

  • 1 pound lean ground beef
  • 1/4 cup finely chopped onion
  • 1 can (6 oz.) tomato paste
  • 2 teaspoons distilled white vinegar
  • 1/4 cup chili powder
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons jarred jalapeño slices, minced
  • 2 1/4 cups water
  • 1 can (16 oz.) refried beans
  • 1 tablespoon cornstarch
  • 1/4 cup cold water
  • 2 cups (8 oz.) Cheddar cheese, shredded
  • 8 large burrito-sized tortillas, warmed

ADDITIONAL INGREDIENTS FOR SERVING

  • Finely chopped onion, cheddar cheese

INSTRUCTIONS

  1. In a large skillet over medium-high heat, brown and crumble the ground beef with the onion until the beef is no longer pink.
  2. To the skillet, add the tomato paste, vinegar, chili powder, salt, garlic powder, cayenne pepper, jalapeño, and 2¼ cups water. Bring to a boil over medium-high heat and cook until the liquid is reduced by half, about 8-10 minutes. Carefully stir in the refried beans and continue to cook, stirring frequently, for 4 minutes.
  3. In a small bowl, add the cornstarch with ¼ cup of cold water and mix well. Immediately pour into the skillet with the beef mixture and stir until the mixture becomes thick.
  4. Remove the skillet from the heat and immediately stir in the 2 cups of cheese.
  5. To serve: Spoon ¾-1 cup of the chili mixture onto the middle of each tortilla. Top with additional onion and cheese, if desired. Roll up tortilla burrito-style and serve immediately.
