Super Crispy Cheesy Fries

 

Ingredients:

  • 500g potatoes, peeled
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 20g fresh coriander, finely chopped
  • 100g mozzarella cheese, grated
  • 2 tbsp. corn flour
  • 2 tbsps. potato starch
  • Cooking oil for frying

Instructions:

  1. Prepare the Potatoes:
    • Cut the potatoes into thin strips to ensure they cook evenly and get that desired crispiness. Soak them in cold water for at least 30 minutes to remove excess starch, which helps in achieving a crispier texture.
  2. Seasoning Mix:
    • In a large bowl, mix the salt, black pepper, and finely chopped coriander. This mix will be used to season our fries, giving them a unique and aromatic flavor.
  3. Coat the Fries:
    • Drain the potatoes and pat them dry with a kitchen towel. Toss them in the seasoning mix until they are evenly coated.
    • Sprinkle the grated mozzarella cheese over the potatoes, ensuring each piece gets some cheesy goodness.
    • Dust the corn flour and potato starch over the seasoned and cheesed potatoes, tossing them gently to coat evenly. This mixture will help in forming a crispy outer layer when fried.
  4. Frying:
    • Heat a generous amount of cooking oil in a deep fryer or a deep pan until it reaches a medium-high temperature (about 180°C or 350°F).
    • Carefully add the coated potatoes in batches to avoid overcrowding, which can lower the oil’s temperature and result in less crispy fries.
    • Fry for about 7 minutes, or until they are golden brown and crispy. The exact time may vary depending on the thickness of your fries and the type of potatoes used.
  5. Serving:
    • Once fried, remove the fries from the oil and let them drain on a paper towel to remove any excess oil.
    • Serve hot and crispy, perhaps with a side of your favorite dipping sauce or simply enjoy them as they are, with their cheesy, crispy goodness shining through.

Low Carb Baked Broccoli Cauliflower Cheese Patties

1 egg

10 oz bag of broccoli/cauliflower rice

2 Tbsp almond flour (can use all purpose flour)

2 cups shredded cheddar cheese

Garlic salt, to taste

Preheat oven to 400*F.

Cook rice in microwave as instructed, drain and cool.

Mix all ingredients together; form into balls and place on a parchment paper lined baking sheet; Smoosh balls flat.

Back for 15 minutes, flip, and bake for an additional 8-10 minutes

Cajun Sugared Bacon

Cajun Sugared Bacon

Ingredients

  

  • 1 lb. bacon
  • 3 tablespoons packed light brown sugar
  • ½ teaspoon Cajun spice more or less, if desired

Instructions

  • Prepare two rimmed baking sheets by lining them with tin foil, and then covering each with a sheet of parchment.
  • Place the bacon on the baking sheets in a single layer, and disperse the brown sugar evenly over the bacon slices. Sprinkle each slide with Cajun spice.
  • Put the baking sheets into the cold oven and turn it on to 400° F. Bake for 17 – 22 minutes, depending on how thick the bacon slices are and how your oven runs temperature wise. If not completely cooked to your liking, check every couple of minutes until done. SEE NOTE
  • Remove the bacon from the oven and transfer slices to a plate lined with paper towel.

Notes

As the bacon approaches the final minutes of baking, be sure to check each pan for doneness. Depending on your oven, one pan may cook more quickly, so be sure to adjust cooking times accordingly. It may be necessary to remove one pan from the oven before the other. ALWAYS know that when baking your bacon in the oven, it can go from being cooked perfectly to burnt in no time.

Cheesy Asparagus Casserol

2 bunches fresh asparagus, trimmed
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon garlic powder
Salt and pepper to taste
1 cup buttery crackers, crushed (such as Ritz)
Directions:

Preheat your oven to 375°F (190°C). Grease a baking dish.
Steam the asparagus until tender-crisp, about 2-4 minutes. Drain and arrange them in the prepared baking dish.
In a mixing bowl, combine the cheddar cheese, Parmesan cheese, mayonnaise, sour cream, garlic powder, salt, and pepper.
Spread the cheese mixture over the asparagus, covering them evenly.
In another bowl, mix the crushed buttery crackers with melted butter and sprinkle this mixture over the cheese layer.
Bake in the preheated oven for about 25-30 minutes or until the casserole is bubbling and the top is golden brown.
Allow it to cool slightly before serving.

Air Fryer Steak Fries

Ingredients

  

  • 2 russet potatoes washed
  • 1 tbsp olive oil
  • 1 tbsp Pappy seasoning optional
  • 2 tbsp granulated garlic
  • 1/4 cup shredded parmesan cheese you can use grated too
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Cut potatoes into wedges & place in a large bowl.
  • Drizzle olive oil over potatoes & add seasonings.
  • Toss to combine & coat.
  • Transfer to air fryer basket & insert into the machine.
  • Set the air fryer to 400 degrees & cook for 20 minutes (stirring half way through)
  • Serve with ranch dressing or ketchup
