Chipotle Mayo Recipe

¾ cup mayonnaise

1 tablespoon lime juice

1 tablespoon maple syrup

1 ½ teaspoons pureed chipotle peppers in adobo sauce (see notes)

12 drops liquid smoke (see notes)

1 large garlic clove

1 ½ teaspoons Dijon mustard

½ teaspoon salt

Add all of the ingredients to a small mixing bowl and mix well.

¾ cup mayonnaise, 1 tablespoon lime juice, 1 tablespoon maple syrup, 1 ½ teaspoons pureed chipotle peppers in adobo sauce, 12 drops liquid smoke, 1 large garlic clove, 1 ½ teaspoons Dijon mustard, ½ teaspoon salt

Either serve it right away or store it for up to 10 days.

Notes

We like to buy a can of chipotle peppers in adobo sauce and then puree them. You can store the pureed peppers in a clean jar in your fridge for a very long time. You can also simply use some of the adobo sauce that is in the jar. 
 
Liquid smoke is an inexpensive ingredient that keeps nearly forever in your pantry. It is available online or near the BBQ sauces in most grocery stores and it adds a wonderful smoky flavor to the mayo.

Homemade Spice Blends

 

FRIES SEASONINGS (potato fries)

2 tablespoons salt

1 tablespoon paprika

2 teaspoons garlic powder

1 tablespoon pepper

1 tablespoon parsley

1/8 teaspoon cayenne pepper

1/8 teaspoon garlic salt (OPTIONAL)

1/8 teaspoon celery salt (OPTIONAL)

STEPS:

Combine all ingredients until thoroughly mixed. Store in a cool, dry, dark place in an airtight container up to 6 months. Sprinkle on plain hot fries.

CHICKEN SEASONING

1/2 tablespoon pepper

1 1/2 tablespoons paprika

1 1/2 tablespoons garlic powder

1 tablespoon onion powder

1/2 tablespoon thyme

1 tablespoon parsley

1 tablespoon ground mustard

1/2 tablespoon oregano

1 tablespoon salt

1/8 tablespoon cayenne

STEPS:

Mix all ingredients and store in a cool, dry place up to 6

months. Can be use as marinade or dry rub to chicken or pork, grilled, baked or even in veggies.

ADOBO SEASONING

6 tablespoons granulated garlic

4.5 tablespoons kosher salt

4 teaspoons black pepper

2 teaspoons oregano

3/4 teaspoon turmeric

STEPS:

Grind in a mortar and pestle or a spice grinder.

Store in a cool, dry place up to 6 months. Can be use for marinade or any adobo dishes.

Homemade Spaghetti Sauce

Ingredients:

¼ cup extra virgin olive oil
1 ½ lb lean ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 green pepper, chopped
1 cup mushrooms, sliced
1 bay leaf
¼ tsp oregano
1 tsp Italian seasoning
1 tbsp tomato paste
1 can crushed tomatoes (28oz can)
1 can tomato sauce (12oz can)
½ tsp salt
¼ tsp pepper
1 tbsp sugar
1 tbsp fresh parsley, chopped (for garnish, optional)
Directions:

Add extra virgin olive oil to a large pot. Add ground beef, onions, garlic, green peppers, and mushrooms. Cook over medium heat until beef is browned and vegetables are softened, about 10 minutes.
Stir in tomato paste, tomato sauce, crushed tomatoes, salt, pepper, sugar, bay leaf, oregano, and Italian seasoning.
Reduce heat to low. Cover. Simmer for 1 hour, stirring occasionally.
Remove bay leaf before serving. Serve with cooked spaghetti noodles or your favorite cooked pasta. Top with fresh parsley, if desired.

Steak Marinade

Steak Marinade

Ingredients:

1/3 cup soy sauce
1/2 cup olive oil
1/3 cup fresh lemon juice
1/4 cup Worcestershire sauce
1 1/2 tablespoons garlic powder
3 tablespoons dried basil
1 1/2 tablespoons dried parsley flakes
1 teaspoon ground white pepper
1/4 teaspoon hot pepper sauce (optional)
1 teaspoon dried minced garlic (optional)
Directions:

In a medium bowl, whisk together the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, white pepper, hot pepper sauce, and minced garlic.
Place steaks in a shallow glass dish with the marinade, turning to coat. For best results, cover and refrigerate for 24 hours, turning occasionally.
Preheat an outdoor grill for high heat.
Brush the grill grate with oil. Place steaks on the grill, and discard the marinade. Grill steaks 7 minutes per side, or to your desired degree of doneness.

Homemade ranch dressing

Homemade Ranch Dressing

Ingredients

½ cup buttermilk

½ cup mayonnaise

½ cup sour cream

⅛ tsp black pepper

¼ tsp sea salt

¾ tsp garlic powder

¼ tsp onion powder

¾ tsp parsley

½ tsp chives

1 tsp dill weed

1 to 3 tsp fresh lemon juice

Instructions

FIRST STEP:

In a large bowl add in the sour cream, buttermilk, and mayonnaise.

Stir in 1 ½ tbsp fresh lemon juice

SECOND STEP:

Using a whisk, add in each of the herbs and spices and whisk well to combine

Add more lemon juice to obtain your desired consistency.

THIRD STEP:

Place into jars or squeeze bottles and then place into the refrigerator.
