Club Sandwich Pasta Salad

Ingredients:
8 ounces rotini pasta
1 cup cooked and diced chicken breast
6 slices cooked bacon, crumbled
1 cup grape tomatoes, halved
1 cup shredded lettuce
1/2 cup diced cucumber
1/2 cup shredded cheddar cheese
1/4 cup red onion, finely chopped
For the Dressing:
1/2 cup mayonnaise
2 tablespoons ranch dressing
1 tablespoon Dijon mustard
1 teaspoon garlic powder
Salt and pepper to taste
Directions:
Cook the pasta according to package instructions. Drain, rinse with cold water, and let cool completely.
In a large bowl, combine the cooled pasta, chicken, bacon, tomatoes, lettuce, cucumber, cheese, and red onion.
In a small bowl, whisk together the mayonnaise, ranch dressing, Dijon mustard, garlic powder, salt, and pepper until smooth.
Pour the dressing over the pasta mixture and toss until well coated.
Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Creamy Ranch Beef Bowtie Skillet with Sweet Corn 

Ingredients:
12 oz bowtie pasta (farfalle)
1 lb ground beef
1 packet ranch seasoning mix
1 ½ cups sweet corn (fresh, frozen, or canned, drained) 
1 cup heavy cream
½ cup sour cream
½ cup shredded cheddar cheese 
1 cup beef broth (or water)
1 tablespoon olive oil
2 cloves garlic, minced 
½ teaspoon black pepper
¼ teaspoon red pepper flakes (optional, for spice)
2 tablespoons chopped fresh parsley (for garnish)
Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil and cook the bowtie pasta according to package instructions until al dente.
Drain, rinse with cool water, and set aside.
2. Brown the Beef:
In a large skillet over medium heat, heat 1 tablespoon olive oil.
Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked (about 5–6 minutes).
Stir in the minced garlic, black pepper, and red pepper flakes (if using), cooking for another minute until fragrant.
Drain excess grease if necessary.
3. Make the Creamy Ranch Sauce:
Reduce heat to low-medium and sprinkle the ranch seasoning mix over the cooked beef.
Pour in the heavy cream and beef broth, stirring to combine.
Add the sour cream and shredded cheddar cheese, stirring until the sauce becomes smooth and creamy.
4. Add the Sweet Corn & Pasta:
Stir in the sweet corn and cooked bowtie pasta, tossing everything together until evenly coated in the creamy ranch sauce.
Let it simmer for 2–3 minutes, allowing the flavors to meld.
5. Serve & Garnish:
Remove from heat and sprinkle with chopped fresh parsley.

Hubby’s Pleasure Casserole

Ingredients
12 ounces egg noodles
1 pound ground beef
8 ounces cream cheese, softened
2 cups marinara sauce
2 cups shredded cheddar cheese
1 cup sour cream
Salt and pepper to taste
1 tablespoon olive oil
1 teaspoon dried oregano
Directions

Directions

Preheat your oven to 350°F (175°C).
Cook the egg noodles according to package instructions until al dente, then drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Season with salt, pepper, and oregano.
Stir in the marinara sauce, and bring the mixture to a simmer. Let it cook for about 5 minutes.
In a large mixing bowl, combine the cooked noodles, cream cheese, sour cream, and half of the shredded cheddar cheese. Mix until the noodles are well coated.
Add the beef and marinara mixture to the noodles and stir until everything is incorporated.
Transfer the mixture to a 9×13 inch baking dish, spreading it evenly.
Sprinkle the remaining cheddar cheese over the top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and slightly golden.
Let the dish cool for a few minutes before serving.
Variations & Tips
For a lighter version, try substituting ground turkey or chicken for the beef. You can also add vegetables like sautéed mushrooms, bell peppers, or spinach for extra nutrients and flavor. If you’re a spice lover, consider adding a pinch of red pepper flakes or some chopped jalapeños. For a different flavor profile, try using a mix of mozzarella and parmesan cheese instead of cheddar.

Crab stuffed Cheddar Bay Biscuit with a Lemon butter sauce

 Ingredients
1 package Cheddar Bay Biscuit Mix
1 tsp garlic
1 tsp Italian Seasoning
Crab:
1 pound lump crab meat, be sure it is fully cooked
¼ tsp paprika
½ tsp onion powder
½ + cup mayonnaise
1 tbsp mustard
½ sleeve Ritz crackers, crushed
1 cup grated parmesan
Make the biscuit mix according to package directions, set to the side
Preheat the oven to 375*, spray two muffin tins with nonstick spray
In a bowl, combine the crab meat, paprika, onion powder, mustard, mayonnaise and crushed crackers
Stir to combine well, adding a touch more mayonnaise if needed.
Using a scoop, place some biscuit mix on your hand that has been dusted with flour, Form a cup type of biscuit
Take a scoop of the crab mix and place it in the bowl part of the biscuit
Cover the biscuit with a little more biscuit dough
Continue until you have used all the dough
Place each biscuit into a muffin tray
Bake for 12 to 15 minutes
Brush with a mixture of melted butter and 1 tsp of lemon juice

Maple Bacon Glazed Chicken Bites

Ingredients:
1 lb chicken breast, cut into bite-sized pieces
8 slices of bacon, cooked and crumbled
½ cup maple syrup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 teaspoon soy sauce
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and black pepper to taste
Cooking spray or oil (for greasing)
Directions:
Prepare the Chicken:
Start by seasoning the bite-sized pieces of chicken with salt and black pepper. Set aside.
Cook the Bacon:
Cook the bacon slices in a skillet over medium heat until crispy. Once done, crumble the bacon into small pieces and set aside.
Make the Maple Glaze:
In a small bowl, whisk together the maple syrup, brown sugar, Dijon mustard, soy sauce, garlic powder, and onion powder until well combined.
Cook the Chicken:
