Mango Salsa Chicken Bowls

Ingredients:

 

2 skinless boneless chicken breasts

2 Tbsp avocado or olive oil

1 small ripe avocado

1 cup cooked quinoa or brown rice

4 cups salad greens

2-3 Tbsp fresh lime juice

Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1/4 cup fresh cilantro, chopped

1 jalapeño (optional), finely chopped

Juice of 1 lime

Salt and pepper to taste

Instructions:

Prepare Mango Salsa: Combine mango, red onion, red bell pepper, cilantro, jalapeño, lime juice, salt, and pepper. Set aside.

Cook Chicken: Season chicken with salt and pepper.

Cook in 1 Tbsp oil until done (5-7 mins each side). Slice.

Assemble Bowls: Place quinoa or brown rice in bowls.

Add salad greens, sliced chicken, and avocado.

Drizzle lime juice over the bowl.

Top generously with mango salsa.

Serve: Garnish with cilantro or lime wedges if desired.
