1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ cup cream cheese
½ cup sour cream
½ cup milk
1 tbsp taco seasoning

In a saucepan over low heat, melt the cream cheese. Slowly stir in the sour cream and milk until the mixture becomes smooth and creamy.
Step 4: Melt the Cheeses
Gradually add shredded cheddar and mozzarella, stirring constantly until the cheese melts and becomes silky.
Step 5: Combine Everything
Pour the cheese sauce into the skillet with the seasoned beef. Add the crumbled bacon and stir until everything is well combined and super cheesy.
Step 6: Serve & Enjoy!
Pour the dip into a serving dish and serve immediately with tortilla chips. Garnish with green onions, diced tomatoes, or jalapeños for extra flavor

Shrimp Egg Rolls

Ingredients

For the Filling:

  • 1 pound cooked shrimp , chopped
(Use peeled and deveined shrimp for convenience.)
  • 1/2 cup shredded cabbage
    (For freshness and crunch.)
  • 1/4 cup shredded carrots
    (Adds sweetness and color.)
  • 1/4 cup bean sprouts
(Provides a delicate crunch and lightness.)
  • 1 green onion , thinly sliced
(Brings freshness and mild onion flavor.)
  • 1 clove garlic , minced
    (Enhances savory notes and aroma.)
  • 1 tablespoon soy sauce
(Forms the base of the umami-rich seasoning.)
  • 1 teaspoon oyster sauce
(Adds depth and richness to the filling.)

For the Egg Rolls:

  • 8–10 egg roll wrappers
(Choose fresh or frozen based on availability.)
  • Vegetable oil , for frying

Optional Dipping Sauce:

  • Sweet chili sauce
  • Soy sauce mixed with lime juice
  • Hoisin sauce

Step-by-Step Instructions

Step 1: Prepare the Filling

  1. In a mixing bowl, combine the chopped shrimp , shredded cabbage , shredded carrots , bean sprouts , green onion , and minced garlic .
  2. Stir in the soy sauce and oyster sauce , ensuring the mixture is evenly coated.

Step 2: Wrap the Egg Rolls

  1. Lay an egg roll wrapper flat on a clean surface with one corner pointing toward you.
  2. Place about 2 tablespoons of the shrimp filling diagonally across the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides and roll upward, sealing the edge with a little water or cornstarch paste. Repeat with remaining wrappers and filling.

Step 3: Fry Until Golden

  1. Heat about 1 inch of vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C) .
  2. Carefully add the wrapped egg rolls to the hot oil in batches, being careful not to overcrowd the pan.
  3. Fry each egg roll for 3–4 minutes per side , or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Step 4: Serve and Enjoy!

Arrange the fried shrimp egg rolls on a platter and serve alongside your favorite dipping sauces. Garnish with additional green onions or sesame seeds if desired.

Tips for Success

  • Chop Shrimp Evenly : Uniform pieces ensure proper distribution throughout the filling.
  • Don’t Overfill Wrappers : Too much filling can cause the egg rolls to burst open during frying.
  • Seal Wrappers Tightly : Use water or cornstarch paste along the edges to ensure a secure seal.
  • Adjust Spice Level : Add red pepper flakes or diced jalapeños to the filling for extra heat.

Variations and Customizations

While the classic version is delicious, feel free to switch things up with these ideas:

  • Chicken or Pork Substitute : Replace shrimp with cooked chicken or pork for variety.
  • Veggie-Packed Option : Include finely chopped bell peppers, mushrooms, or zucchini for added nutrients.
  • Spicy Kick : Stir in Sriracha or hot sauce for a fiery twist.
  • Gluten-Free Wrappers : Use rice paper or gluten-free egg roll wrappers for dietary restrictions.

Serving Suggestions

These Shrimp Egg Rolls pair wonderfully with a variety of sides and drinks:

  • Serve alongside steamed rice, dumplings, or spring rolls for a complete Asian-inspired meal.
  • Offer them as part of a party appetizer tray with other fried snacks.
  • Pair with cold beverages like soda, sparkling water, or beer for refreshment.
  • Freeze uncooked egg rolls for later use—simply fry when ready.

 2 ingredient Bagels

Ingredients

Bagel Dough
  • 3 ½ cups (17 ½ oz/497 g) self rising flour
  • 2 cups (16 oz/450 g) Greek yogurt
Optional Toppings
  • Egg Wash
  • 4 tablespoons sesame seeds , poppy seeds or Everything Bagel topping
Instructions
To Make the Bagels
  • Preheat the oven to 350°F (180°C), set a large pot of water to boil and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the flour and yogurt and knead together to form a dough. (If the dough seems very dry and won’t come together, you can add more yogurt, 1 tablespoon at a time, until it does.)
  • Divide the dough into 6 equal portions.
  • For each piece of dough, first roll it into a tight ball on a work surface (use a small amount of flour if needed), then pat the ball of dough into a flattened disc, about 3-inches (7 ½ cm).
  • Using a 1-inch cookie cutter, cut a hole in the center. Repeat with the remaining balls of dough.
  • Depending on the size of your pot, put about 3 bagels at a time in the boiling water and cook for 30-40 seconds per side and then transfer them to the prepared baking sheet.
To Top and Bake the Bagels
  • If you want to top the bagels, first brush all over with egg wash, then sprinkle with your desired topping.
  • Bake for 30-35 minutes or until golden. Serve warm or room temperature.
  • Store in an airtight container at room temperature for 2 days or in the refrigerator for up to 3 days.
Recipe Notes
  • This recipe has been tested with Greek yogurt. If you only have plain yogurt, you will either need to strain it or use less because it contains more liquid, but we can’t say precisely how much less. Start with ½ cup (4 oz/115 g) and add in a little more at a time until your dough comes together.
  • You can gather the cut-out centers and make a seventh bagel or bake the holes as is (be sure to boil them as well).
  • Boiling the bagels is a necessary step to achieve a chewy texture.
  • Brushing the bagels with egg wash will give them a nice, shiny finish, even if you don't add toppings.
  • If you don’t have self-rising flour, you can find out how to make your own here.
  • Enjoy your homemade bagels with cream cheese (learn how to make homemade plain, chocolate, strawberry, or garlic and herb cream cheese!), butter,  my flavored butters, jam, or peanut butter!
