Cranberry Orange Bread Loaf with Glaze

 

Ingredients:

2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh cranberries
Zest of 1 orange
1/2 cup freshly squeezed orange juice
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
For the Glaze:
1 cup powdered sugar
2-3 tablespoons freshly squeezed orange juice
Directions:

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
Gently fold in the fresh cranberries and orange zest.
In another bowl, whisk together the freshly squeezed orange juice, melted butter, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes, then remove it from the pan and place it on a wire rack to cool completely.
To make the glaze, whisk together powdered sugar and 2-3 tablespoons of freshly squeezed orange juice until you achieve a smooth consistency.
Drizzle the glaze over the cooled bread and let it set for a few minutes before slicing.
