Pineapple Dream

 

Ingredients: 1 (20 oz) can crushed pineapple, drained 1 (3.4 oz) package instant vanilla pudding mix 1 (8 oz) package cream cheese, softened 1 cup powdered sugar 1 teaspoon vanilla extract 1 (8 oz) container frozen whipped topping, thawed 1 1/2 cups graham cracker crumbs 1/2 cup unsalted butter, melted Directions: In a mixing bowl, combine the drained crushed pineapple and instant vanilla pudding mix. Mix well and set aside. In another mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract to the cream cheese, and beat until well combined. Fold in the thawed whipped topping until smooth and evenly mixed. In a separate bowl, mix together the graham cracker crumbs and melted butter until well combined. Press the graham cracker mixture evenly into the bottom of a 9x13-inch baking dish to form the crust. Spread the cream cheese mixture evenly over the graham cracker crust. Spoon the pineapple and pudding mixture over the cream cheese layer, spreading it out evenly. Cover and refrigerate the Pineapple Dream for at least 4 hours, or until set. Once chilled and set, slice into squares and serve.
